How to Store Beetroot

Beetroot is a reliable winter root crop, with a sweet, earthy flavour that holds well after careful lifting. Smaller and medium-sized roots generally store better than oversized ones. Leave only sound, dry, unblemished beetroot for long keeping, and twist off foliage rather than cutting into the crown.

Best storage conditions

Store beetroot at 0-4 degrees C in darkness with high humidity and gentle ventilation. A cool, frost-free shed, garage, cellar or protected clamp is suitable. Pack roots in just-moist sand or coir to prevent shrivelling, but avoid wet material and sealed containers, which invite mould. If leaving roots outside, mulch the row and ensure the ground is not prone to standing water or severe frost.

How long it keeps

Stored beetroot commonly keeps for 3-5 months. Roots left in the ground under mulch can be lifted over much of winter, although prolonged hard frost, waterlogging or slug damage may shorten their useful life. Inspect boxed roots regularly and remove anything soft, mouldy or leaking.
