Fresh French beans are a short-lived summer crop and should be eaten, frozen or preserved soon after picking. Choose crisp, unblemished pods picked when young and tender. For dry beans, leave suitable French or borlotti types on the plant until pods are papery, then finish drying them carefully under cover before shelling.

Best storage conditions

Fresh pods keep best only briefly at 4 to 7 degrees C, with high humidity and no crushing, ideally in a refrigerator rather than a shed. They should be dry and ventilated, not sealed while wet. Fully dried beans need almost opposite conditions: a dry, dark, cool cupboard or frost-free room, with low humidity and good protection from pests. Never store damp pods or beans.

Fresh French beans are best within 2 to 4 days of harvest. Blanched frozen beans keep good quality for around 10 to 12 months in a chest freezer. Properly dried, fully mature beans can keep for a year or longer in an airtight container, provided they remain dry and pest-free.
