How to Store Swede

Swede is a dependable winter crop for exposed British gardens and allotments. Its hardy roots can usually stay in the ground for gradual lifting, but a lifted crop also stores well when protected from frost and drying. Choose firm, unblemished roots and use any with pest damage or split skins first.

Best storage conditions

Swede stores best at 0-4 degrees C in darkness with high humidity and gentle airflow. In the ground, it tolerates cold weather but benefits from a mulch covering where frost is prolonged. Lifted roots can go into just-moist sand or coir in a frost-free shed, garage, cellar or clamp. Avoid waterlogged soil, sealed plastic containers and dry heated rooms, which cause shrivelling and spoilage.

How long it keeps

Roots left in good ground can be lifted through winter. Lifted, sound swede generally keeps for 3-5 months in cool, humid conditions. Check stored roots regularly, using any that soften, become mouldy or show damaged areas. Their quality is best before spring growth begins.

Storage methods

For the simplest approach, leave swede in the bed and mulch around the crowns with dry straw or leaves, lifting roots as needed. Where soil is wet, heavily frozen or needed for another crop, lift carefully on a dry day. Trim leaves to a short stub and brush off loose soil without washing. Store roots in boxes of just-moist sand or coir, ensuring they do not touch, in a cold frost-free shed, garage or cellar. A traditional well-drained clamp of straw and earth can hold a larger harvest. Sort and inspect regularly.

Preserving

Dice or mash cooked swede and freeze in portions for a chest freezer. Blanched cubes freeze well for soups, stews and mixed roasted vegetables. Swede can be included in chutneys or mixed pickles when using a trusted recipe. Drying small pieces produces a useful soup ingredient, although fresh texture and flavour will be different after rehydrating.

Tips

Do not confuse swede with tender roots when planning winter storage: it is robust, but no root withstands waterlogging indefinitely. Keep a few roots in the kitchen only for immediate use; warmth reduces storage life. Protect lifted roots from frost, and remove any damaged one promptly so its neighbours remain sound.
